This is a personal favorite and my family loves it. I love my strawberry filling to pieces but feel free to try out a ton of different fillings, my basic filling recipe can by translated for practically any different fruit. Have fun and I hope to see what you make!

Basics:
Makes twelve
Takes a few hours to make, most of that is chilling, cooling, or sitting overnight
Bakes at 400 F for 20-25 minutes
Ingredients:
Sourdough puff pastry (recipe linked above)
2 cups Strawberries (I used frozen, if using fresh you may want to add in a touch of water)
1/2 cup sugar
1/4 cup cornstarch
vanilla (to taste)
salt (to taste)
milk of your choice and sugar for topping
Instructions:
1) Begin by making the puff pastry dough to ferment overnight, you will add in the butter on day two.
2) Laminate the puff pastry by adding in the butter and let it chill for a few hours.
3) During the chilling we'll make the filling. Mix the strawberries (I used whole frozen strawberries), sugar, and cornstarch in a sauce pan on medium heat. Stirring occasionally until the mixture becomes a liquid, add in vanilla and salt to taste and heat until it is thick. Allow to cool.
4) Preheat the oven to 400 F
5) By this time the filling is cooled and the puff pastry is done chilling. Split the dough into twelve pieces, roll each out flat in a long rectangle and spoon a little filling inside. Then fold the rectangle longwise into a sort of square and secure the edges by pressing down with the flat side of a fork. Cut a slit in the top. Brush milk of your choice on top and sprinkle sugar.
6) Bake for about 20-25 minutes.
